Under the direction of Chef Rodolfo Castellanos, winner of Top Chef Mexico, LÙMARA presents a contemporary vision of Mexican gastronomy – elegant, refined, and deeply inspired by the culinary roots of Oaxaca.
His creations harmoniously blend textures, spices, and modernity: lobster ceviche with jalapeño, flamed wagyu aguachile, shellfish with mezcal, and linguine with huitlacoche and truffle. A cuisine of contrasts – between fire, smoke, and freshness – where mountain produce meets the vibrant flavours of Mexico.
